Kulaç Soda Bread

Ingredients

  • 3 3/4 cupsall-purpose flour, plus extra for kneading
  • 2 cupsgreek yogurt
  • 1/2 tspsalt
  • 1 tspbaking soda, baking soda matches the soda bread title and instructions
  • olive oil, splash, for the tray and topping

Method

    Mix together the flour, baking soda, and salt in a large bowl or directly on a baking sheet. Make a well in the center and add the yogurt.

    Using your hands, slowly combine the ingredients until a dough forms. Turn out onto a floured surface and knead for a few minutes, adding flour a little at a time if too sticky, until the dough is smooth and slightly tacky like pizza dough.

    Add a little oil to a baking sheet and place the dough on top. Shape and flatten into a circle about 5cm high. Brush the surface generously with olive oil.

    Score the top with the back of a fork (lines or dots) to help with even cooking.

    Place on the bottom shelf of a preheated oven and bake for 40 minutes, or until golden and firm to touch. Cool upright on a rack, then cut into 8 wedges.
