Step 2

In a separate pot, add all the vegetables (peppers, mushrooms, sweetcorn, carrots) and cook over medium heat, stirring, until softened.

Add the rice, raisins, turmeric, kabsa spice, salt and black pepper to the vegetables. Add 2½ cups of the chicken cooking liquid and stir to combine. Cook until the rice has absorbed the liquid.

Once the rice is cooked, arrange the chicken over the rice mixture and transfer everything to the oven to finish.
