Jeyuk Bokkeum (Spicy Pork Stir-Fry)

Gochujang-marinated pork, seared until the edges caramelise.

Ingredients

  • 1 1/3 lbpork shoulder, sliced thinly; belly works too if you want it richer
  • 3 tbspgochujang
  • 1 tbspgochugaru, Korean chilli flakes
  • 2 tbspsoy sauce
  • 4 clovegarlic, minced
  • 2 tspginger, grated
  • 1 tbspcaster sugar
  • 1 tbspsesame oil
  • 1onion, sliced
  • 3spring onions, cut into short lengths
  • 1 tbspvegetable oil
  • 2 tsptoasted sesame seeds

Method

    Whisk the gochujang, gochugaru, soy sauce, garlic, ginger, sugar and sesame oil together into a thick paste.

    Rub the paste through the sliced pork until every piece is red, then leave it for 20 minutes while you cut the onion and spring onions.

    Heat the vegetable oil in a wide pan over a high heat and cook the sliced onion for 2 minutes, until it has softened at the edges but still has some crunch.

    Add the pork in one layer and leave it undisturbed for 2 minutes so the marinade catches and darkens. Then stir and cook for 4 to 5 minutes more, until the pork is cooked through and the edges have caught.

    Toss through the spring onions, take the pan off the heat and scatter with sesame seeds. Serve with rice and something cold and crunchy alongside.
