Ingredients

  • 1/2cabbage, half a head, shredded
  • 2carrots, sliced
  • 1plum tomatoes, chopped
  • 1onion, chopped
  • 4 clovegarlic, chopped
  • 4scallions, chopped
  • 4 sprigthyme
  • 1/2Scotch bonnet pepper, deseeded if less heat desired
  • 2 tbspwater
  • 2 tbspolive oil
  • 4 tbspunsalted butter
  • 2 tspkosher salt
  • 1 tspblack pepper

Method

  1. 1

Shred the cabbage, slice the carrots, and chop the tomato, onion, garlic and scallions. Split the Scotch bonnet and scrape the seeds out if you want its flavor without the full heat.

  2. 2

Put the olive oil, butter and water into a large pan over medium heat and let the butter melt into the oil.

  3. 3

Add the cabbage, carrots, tomato, onion, garlic, scallions, thyme sprigs and Scotch bonnet, season with the salt and black pepper, and put the lid on.

  4. 4

Cook covered for 10 minutes, lifting the lid every few minutes to stir so the layer at the bottom does not catch.

  5. 5

Turn the heat to low and give it another 5 minutes, until the cabbage is tender but still holds its shape. Pull out the thyme stalks and the Scotch bonnet before serving.
