Step 2

Add the brown sugar, vanilla extract, cinnamon, nutmeg and a pinch of salt. Sift in the flour and stir until fully combined.

Step 3

Add enough oil to a 10-inch skillet to shallow-fry and heat over medium-high. Once hot, drop spoonfuls of batter into the oil.

Step 4

Fry until one side is golden and bubbles appear on the top surface, then flip and cook until the other side is browned. Remove and drain on paper towels. Serve warm.
