Honey Soy Chicken Thighs
Four things in a bowl, chicken in the oven, no pan to scrub.
Ingredients
- 8bone-in skin-on chicken thighs
- 1/4 cuphoney
- 1/4 cupsoy sauce
- 4 clovesgarlic, minced
- 1 tsptoasted sesame oil
- 2green onions, sliced, to finish
Method
- 1
Heat the oven to 400°F. Line a roasting pan with parchment or foil — this is not optional advice, a honey glaze bakes onto bare metal and will not come off.
- 2
Stir the honey, soy sauce, garlic and sesame oil together in a bowl big enough to hold the chicken.
- 3
Turn the thighs through the glaze until they are covered, then lay them skin up in the lined pan, spaced apart. Pour whatever glaze is left in the bowl around them rather than over the skin, so the skin can still crisp.
- 4
Roast for 25 minutes, then spoon the pan juices over the thighs and roast for another 10, until the skin is dark and sticky and the thickest part reads 165°F.
- 5
Let them sit for five minutes — the glaze thickens as it cools and stops running straight off. Scatter the green onions over the top.
