Roast them plain first

Heat the oven to 400°F. Toss the carrots with the olive oil, salt and pepper, spread them in a single layer, and roast until tender and starting to brown.

— Cut thick carrots lengthways rather than into coins. Flat faces sit on the tray and caramelize properly.
