Ingredients
- 4 slicesourdough bread, cut about 1 cm thick
- 1 1/2 ozsalted butter, softened
- 4 1/4 ozmature cheddar, a variety labelled suitable for vegetarians, coarsely grated
- 1 tspDijon mustard
Method
- 1
Spread butter right to the edges of one side of each slice of bread. Turn two slices over and spread a thin scrape of Dijon on the dry side.
- 2
Pile the grated cheddar onto the mustard side of two slices, right to the edges, and top with the other two slices so the buttered faces are on the outside.
- 3
Set a skillet over low heat, lay the sandwiches in, and cover with a lid or a plate. Cook until the underside is a deep even gold.
- 4
Turn them over, press down lightly with a spatula, and cook the second side until golden and the cheese has run at the edges. Let them sit for a minute before cutting.
