Grilled cheese

Butter on the outside, low heat, and a lid — that is the entire technique.

Ingredients

  • 4 slicesourdough bread, cut about 1 cm thick
  • 1 1/2 ozsalted butter, softened
  • 4 1/4 ozmature cheddar, a variety labelled suitable for vegetarians, coarsely grated
  • 1 tspDijon mustard

Method

    Spread butter right to the edges of one side of each slice of bread. Turn two slices over and spread a thin scrape of Dijon on the dry side.

    Pile the grated cheddar onto the mustard side of two slices, right to the edges, and top with the other two slices so the buttered faces are on the outside.

    Set a skillet over low heat, lay the sandwiches in, and cover with a lid or a plate. Cook until the underside is a deep even gold.

    Turn them over, press down lightly with a spatula, and cook the second side until golden and the cheese has run at the edges. Let them sit for a minute before cutting.
