Granola
Oats, nuts and honey baked low and stirred rarely, so it clumps instead of scattering.
Ingredients
- 14 ozrolled oats, jumbo or rolled oats, not instant
- 3 1/2 ozpecans, roughly broken
- 2 ozflaked almonds
- 2 ozpumpkin seeds
- 4 1/4 ozrunny honey
- 3/8 cupvegetable oil, or melted coconut oil
- 1 3/4 ozlight brown sugar
- 2 tspground cinnamon
- 1 tspfine sea salt
- 2 3/4 ozdried cranberries, stirred in after baking, not before

Heat the oven to 300°F. Tip the oats, pecans, flaked almonds, pumpkin seeds, cinnamon and salt into a large bowl and toss them together with your hands.

Warm the honey, oil and brown sugar together in a small pan over a low heat, just until the sugar has dissolved and the mixture pours easily. Pour it over the oats and stir until every piece is glossy.

Spread the mixture over a large lined baking sheet and press it down firmly with the back of a spoon into an even slab. Bake for 20 minutes, turn the tray around, press it down again and bake for another 15 minutes until the edges are deep gold.

Leave the tray on a rack until the granola is completely cold and has set hard, then break it into clusters and stir through the dried cranberries. Store in a sealed jar.
