Golden Milk
Turmeric, ginger and black pepper warmed into milk. Ten minutes, and it should not boil.
Ingredients
- 2 1/8 cupswhole milk
- 1 tspground turmeric
- 1 tspfresh ginger, finely grated
- 1/2 tspground cinnamon
- 1 pinchblack pepper, freshly ground — not optional
- 1 tspcoconut oil
- 2 tsphoney, to taste, stirred in off the heat

Melt the coconut oil in a small saucepan over medium-low heat and add the turmeric, the grated ginger, the cinnamon and the black pepper. Stir for about thirty seconds until it smells earthy and warm. This short step is why it does not taste like dusty milk.

Pour in the milk and whisk to break up the paste. Bring it up slowly until it steams and there is the very first tremble at the edge of the pan.

Keep it there for five minutes without letting it boil, whisking now and then. A boil splits the milk and dulls the ginger.

Pour through a small strainer into two mugs to catch the ginger threads, then stir in the honey off the heat. Adding honey to a boiling pan wastes it.
