Full English Breakfast
The full British cooked breakfast — every element done properly.
Ingredients
- 4sausages, pork
- 4 piecesbacon, Canadian bacon slices
- 4mushrooms, field mushrooms
- 3tomatoes, vine or plum
- 2 piecesblack pudding, slices; skin removed before cooking
- 2eggs
- 2 slicesbread, preferably 2 days old
- 3 1/2 ozbaked beans
- 3 tbsplight olive oil, 1 tbsp for the griddle and vegetables, 2 tbsp for the bread
- 1/2 ozbutter, for basting eggs and bread
- salt, to taste
- black pepper, to taste
Method
- 1
Before anything goes on the heat: snip the fatty edge of each bacon slice, trim the mushroom stalks level with the caps, halve the tomatoes and cut out the green core, and peel the skin off the black pudding and slice it. Heat the oven to 200°F with the plates and a baking sheet inside to keep things warm.
- 2
Heat a griddle or large heavy skillet over low heat, brush it lightly with oil and lay in the sausages. Cook them slowly for 15 to 20 minutes, turning now and then and raising the heat to medium after 10 minutes, until deep golden all over and 160°F in the middle.
- 3
With about 8 minutes left on the sausages, push them to one side and fry the bacon next to them for 2 to 3 minutes a side, until the fat is golden. Move the bacon to the oven.
- 4
In the bacon's place, lay the mushrooms stalk side up and the tomatoes cut side down, season with salt and pepper and drizzle with a little oil. Leave them for 2 minutes — moving mushrooms makes them weep and go soggy — then turn and cook 3 minutes more, until the tomatoes are tender but holding their shape.
- 5
Move the sausages, mushrooms and tomatoes to the oven as they finish and fry the black pudding for 1½ to 2 minutes a side, until crisp at the edges. Warm the beans in a small saucepan over low heat at the same time, stirring now and then.
- 6
Meanwhile, heat 2 tbsp of the oil in a separate skillet over medium heat and fry the bread for 2 to 3 minutes a side, until golden, adding a little of the butter after you turn it. Move it to the oven.
- 7
Crack the eggs into the bread pan and leave them for 30 seconds, then add the rest of the butter and spoon it over them as it melts. Cook for 2 to 3 minutes, until the whites are set, and season.
- 8
Serve everything straight away on the warm plates, with the beans, and ketchup or brown sauce.

Cook's note
The photo is a smaller plate than this recipe makes: no mushrooms, tomatoes or black pudding, and toast where the recipe fries the bread.
