Fruit and Cream Cheese Breakfast Pastries
Preheat oven to 400°F. Line two baking sheets with parchment paper.
Step 2
In a bowl, mix the cream cheese, sugar and vanilla extract until fully combined.

Lightly flour a surface and roll out each puff pastry sheet slightly. Cut each sheet into 9 equal squares (18 total).
Step 4
On each square, cut an L shape from the top-right corner and an L shape from the bottom-left corner, approximately 1 cm (½ inch) from the edge. The L cuts should reach all the way along both sides but must not meet at the ends. The pastry should look like a picture frame with two corners still intact.
Step 5
Fold the top-right corner down toward the inner bottom corner to create a diamond shape with raised edges.
Step 6
Place 1–2 tsp of cream cheese filling in the center. Top with berries. Place on prepared baking sheets.
Step 7
Bake for 15–20 minutes until golden brown and puffed.
