Flapjacks

Oats bound in butter, golden syrup and sugar, baked until the edges catch and cut warm.

Ingredients

  • 14 ozrolled oats, porridge or jumbo, not instant
  • 8 3/4 ozsalted butter
  • 6 1/4 ozlight brown sugar
  • 4 1/2 ozgolden syrup
  • 1/2 tspfine sea salt
  • 1 tspvanilla extract

Method

    Heat the oven to 355°F and line a 20 by 30cm pan. Melt the butter, sugar and syrup together in a large pan over a low heat, stirring until the sugar has dissolved, then take it off the heat and stir in the vanilla and salt.

    Tip in the oats and stir until every flake is coated and there is no dry oat left in the bottom of the pan.

    Tip the mixture into the pan and press it down firmly and evenly with the back of a spoon, paying attention to the corners.

    Bake for 22 to 25 minutes, until the edges are deep gold and the middle still looks slightly underdone and soft. Score into squares while it is warm and leave it in the pan until completely cold before lifting them out.
