South Asian chilled milk pudding with cardamom and rose water.
Ingredients
- 6 cupswhole milk, 1 cup reserved for mixing with cornstarch
- 5 tbspcornstarch, whisked with 1 cup of the cold milk to make a slurry
- 1 1/2 cupssugar
- 1/2 tspground cardamom
- 1 tsprose water, optional per instructions
- 1 ozalmonds, a handful; sliced; for garnish
- 3 tbsppistachio, a handful; for garnish
Method

Pour 1 cup of cold milk into a small bowl, add the cornstarch and whisk until completely smooth with no lumps.

Pour the remaining 5 cups of milk into a non-stick saucepan. Add the sugar and cardamom (and rose water if using) and cook over medium heat, stirring.

Before the milk boils, slowly pour in the cornstarch slurry, whisking constantly to avoid lumps. Keep stirring until the mixture thickens.

Remove from heat and pour into a large shallow serving bowl or individual dishes. Cool to room temperature, then refrigerate for 1–2 hours until set.

Sprinkle with sliced almonds and pistachios just before serving.
