Fava Santorinis

Yellow split peas cooked to a purée and eaten warm with raw onion.

Ingredients

  • 8 3/4 ozyellow split peas, rinsed until the water runs clear
  • 1onion, roughly chopped
  • 3/8 cupextra virgin olive oil
  • 1lemon, juiced
  • 1/2red onion, finely diced, to serve
  • 3/4 ozcapers, rinsed
  • 1 tspsea salt
  • 2bay leaves

Method

    Put the rinsed split peas in a heavy pan with the chopped onion and bay leaves, cover generously with cold water and bring slowly to the boil, skimming off the grey foam as it rises.

    Turn the heat right down and simmer, stirring now and then so nothing sticks, until the peas have completely broken down and the mixture looks like loose porridge.

    Fish out the bay leaves and blend the peas with most of the olive oil, the lemon juice and the salt until completely smooth. Loosen with a little of the cooking water if it is stiff.

    Spread it into a shallow bowl, top with the diced red onion and the capers, and pour the rest of the olive oil over.
