Fasoliyyeh Bi Z-Zayt (Syrian Green Beans with Olive Oil)
Syrian green beans slow-cooked in olive oil with garlic
Ingredients
- 1 lbgreen beans, frozen
- 1/4 cupolive oil
- salt, to taste
- 1 clovegarlic, minced
- 1/4 cupcoriander, fresh, chopped
Method

Put the frozen green beans straight into a large pot — no need to thaw them — and drizzle the olive oil over. Season with salt.

Put the lid on and set the pot over medium-high heat. The ice on the beans melts and steams them in the oil, which is the whole method — you are not sautéing.

Cook for about 20 minutes, stirring occasionally and keeping the lid on between stirs, until the beans are as soft as you like them. Cooked the Syrian way they go a brownish olive color rather than staying green.

Stir in the minced garlic and the chopped cilantro and cook for another minute or two, just until the coriander wilts.

Serve warm with pitta bread to scoop it up, either as a main or as part of a spread.
