Easy Chicken Noodle Soup

Already-cooked chicken, a couple of vegetables, and noodles straight in the pot. Ready in twenty-five minutes.

Ingredients

  • 1 1/2 quartschicken stock
  • 10 1/2 ozcooked chicken, shredded
  • 5 1/4 ozegg noodles
  • 2carrots, sliced into coins
  • 2 stalkscelery, sliced
  • 1onion, finely chopped
  • 1/4 ozflat-leaf parsley, chopped
  • 1 tspsea salt, to taste

Method

    Bring the stock to a simmer in a large pot. Add the onion, carrots, and celery and cook until the carrots are just tender, about 10 minutes.

    Add the egg noodles straight to the simmering broth and cook for the time on the package, usually 4 to 6 minutes, until just tender.

    Stir in the shredded chicken and let it warm through for a couple of minutes. Taste the broth and add salt until it tastes full and savory.

    Take the pot off the heat, stir through most of the parsley, and ladle into bowls. Scatter the rest of the parsley on top.
