Easy Chicken Fried Rice

Day-old rice, cooked chicken, and egg in a hot pan. On the table in fifteen minutes.

Ingredients

  • 1 1/3 lbcooked rice, cold, day-old
  • 8 3/4 ozcooked chicken, diced
  • 2eggs, beaten
  • 3 1/2 ozfrozen peas and carrots, from frozen
  • 4scallions, sliced, whites and greens kept separate
  • 2 clovesgarlic, minced
  • 2 tbspsoy sauce
  • 2 tbspvegetable oil

Method

    Heat 1 tablespoon of the oil in a large pan or wok over high heat. Pour in the beaten eggs, let them set for a few seconds, then scramble into soft pieces and tip them back onto a plate.

    Add the rest of the oil to the hot pan. Fry the scallion whites and garlic for 30 seconds, then add the diced chicken and the peas and carrots and toss for a minute to heat through.

    Tip in the cold rice and break up any clumps with your spoon. Spread it across the pan and let it fry, tossing every so often, until it is hot and starting to crisp in places, about 4 minutes.

    Pour the soy sauce down the side of the pan and toss to coat. Return the egg, add the scallion greens, and toss once more. Taste, add a splash more soy if it needs it, and serve.
