Dorayaki
Two honey pancakes sandwiched around sweet red bean paste.
Ingredients

- 3 1/2 ozcaster sugar
- 2 tbsphoney
- 5 3/4 ozplain flour
- 1 tspbaking powder
- 10 1/2 ozred bean paste
- 1 tbspvegetable oil
Method

Whisk the eggs, sugar and honey together until pale and slightly thickened.

Sift the flour and baking powder over the top and fold them in until just smooth, then cover the bowl and leave the batter to rest.

Wipe a non-stick pan with the barest film of oil and set it over low-medium heat. Drop in tablespoons of batter and cook until the surface is covered in burst bubbles and the underside is an even golden brown.

Flip each one and give it another thirty seconds or so, then stack them under a clean tea towel so they steam gently and stay soft.

Pair the pancakes by size and put a generous spoonful of red bean paste on the paler side of one, doming it in the middle, then press the other on top and cup the edges to seal.
