Cranberry sauce

Fifteen minutes, three ingredients, and it stops when you hear the berries pop.

Ingredients

  • 14 ozcranberries, fresh or frozen
  • 5 1/4 ozsuperfine sugar
  • 1orange, zest and juice
  • 3/8 cupwater
  • 1/4 tspground cinnamon, optional

Method

    Put the sugar, water and orange juice in a saucepan over a low heat and stir until the sugar has completely dissolved and the liquid is clear.

    Tip in the cranberries, bring the pan up to a gentle simmer, and leave them alone. Within a few minutes you will hear them start to pop.

    Cook only until about three quarters of the berries have burst and the rest are still holding their shape, then take the pan straight off the heat.

    Stir in the orange zest and the cinnamon if using, then leave the sauce to cool completely before serving. It keeps in the fridge for a week.
