Cornbread
Batter poured into a skillet already sizzling with butter, so the crust sets on contact.
Ingredients
- 7 ozcornmeal, medium grind
- 4 1/4 ozall-purpose flour
- 1 1/2 ozsuperfine sugar
- 2 tspbaking powder
- 1/2 tspbaking soda
- 1 tspsea salt
- 1 1/2 cupsbuttermilk
- 2eggs, beaten
- 2 3/4 ozunsalted butter, melted, plus more for the pan

Heat the oven to 400°F and put a heavy ovenproof skillet or cake pan in to get properly hot while you make the batter.

Whisk the cornmeal, flour, sugar, baking powder, baking soda and salt together in a large bowl until evenly combined.

Beat the buttermilk, eggs and most of the melted butter together, pour them into the dry ingredients, and fold just until no dry flour is left. The batter should still look lumpy.

Take the hot skillet out, swirl the remaining butter around it until it foams, then pour the batter straight in — it should sizzle at the edges immediately.

Bake until the top is golden, the edges have pulled away from the pan, and a skewer comes out clean. Let it sit for a few minutes before cutting into wedges.
