Chili Oil Noodles

Hot oil poured over garlic and chili in the bowl. No pan, no sauce to make.

Ingredients

  • 7 ozdried wheat noodles
  • 4 clovesgarlic, minced
  • 2 tbspred pepper flakes
  • 3green onions, sliced
  • 2 tbspsoy sauce
  • 1 tbspblack vinegar, or rice vinegar
  • 1/4 cupvegetable oil

Method

    Cook the noodles in boiling water according to the package, then drain them and divide between two deep bowls. Do not rinse them — the starch on the surface is what the sauce clings to.

    On top of each mound of noodles, put half the garlic, half the red pepper flakes and half the green onions in a single heap in the middle. Keep them together rather than scattered — the oil has to land on all of it at once.

    Heat the vegetable oil in a small pan over high heat until it shimmers and a scrap of green onion dropped in sizzles hard immediately, about 2 minutes. Lukewarm oil leaves you eating raw garlic.

    Pour the hot oil straight onto the heaps of garlic and chili. It should hiss loudly and the garlic should turn golden in front of you.

    Add the soy sauce and vinegar to each bowl and toss everything hard until the noodles are evenly colored and glossy.
