Chicken Quesadilla
Cheese on both sides of the filling, or it falls apart when you cut it.
Ingredients
- 4large flour tortillas, large
- 8 3/4 ozcooked chicken, shredded
- 7 ozcheddar, grated
- 3green onions, sliced
- 1 tspground cumin
- 3/4 ozbutter, for the pan
Method

Toss the shredded chicken with the cumin and the green onions.

Lay a tortilla on the board. Scatter a quarter of the cheese, then half the chicken, then another quarter of the cheese, then the second tortilla. Cheese above and below the filling is what welds the two tortillas together.

Melt half the butter in a large skillet over medium-low heat and slide the quesadilla in. Cook for about 3 minutes a side, pressing down gently with a spatula, until the outside is golden and the cheese has gone completely liquid. High heat browns the tortilla before the middle melts.

Repeat with the second one. Let each quesadilla sit for a minute before cutting into wedges — cut it straight out of the pan and the molten cheese runs out and the whole thing collapses.
