Chicken Fajita Mac and Cheese
Heat olive oil in a large pot over medium heat. Add the onion, red peppers, and garlic and fry until nicely translucent.
Step 2
Make a well in the vegetables and add the diced chicken. Add the fajita seasoning and salt. Allow the chicken to colour slightly.
Step 3
Add the cream, chicken stock, and dry macaroni. Stir to combine, then cook on low heat for 20 minutes until the pasta is tender and most of the liquid has been absorbed.
Step 4
Add the cheddar cheese and stir to melt and combine.
Step 5
Top with roasted peppers and chopped parsley. Serve immediately.
