Cheese Omelette
Three eggs, a pat of butter and a handful of cheddar. Under five minutes.
Ingredients

- 1/2 ozsalted butter
- 1 1/2 ozmature cheddar, grated
- 1/4 ozchives, finely snipped
- 1/4 tspsea salt

Crack the eggs into a bowl with the salt and beat them with a fork for a good 30 seconds, until the yolks and whites are completely combined and there are no clear streaks left.

Melt the butter in a small non-stick skillet over a medium heat and swirl it up the sides. When the foam has subsided but the butter has not begun to brown, pour in the eggs.

Let the eggs sit for 10 seconds, then use a spatula to push the set edges toward the middle, tilting the pan so the raw egg runs into the gaps. Repeat for about 90 seconds, until the top is barely wet.

Scatter the cheddar and chives over one half, take the pan off the heat and leave it for 20 seconds so the cheese softens. Fold the bare half over and slide it onto a plate.
