Put the oil, flour, baking soda, sugar, eggs, salt and cinnamon in a large bowl and mix until well combined. Stir in the grated carrots and walnuts.

Spoon the batter into the prepared pan and bake for 1 hour 15 minutes, or until a skewer inserted into the center comes out clean.

Remove from the oven and cool in the pan for 10 minutes, then turn out onto a wire rack and leave to cool completely.

Make the icing: beat the cream cheese, superfine sugar and softened butter together in a bowl until light and fluffy.

Step 6

Spread the icing over the top of the cooled cake with a offset spatula.
