Cambodian Waffles (Num Poum)
Crispy Cambodian coconut and palm sugar waffles.

Ingredients
- 1/2 cuprice flour
- 1/2 cupwheat flour
- 1/2 cupcoconut milk
- 3/4 cuppalm sugar, grated or dissolved
- 2eggs
- 1/2 tspsalt
- oil, for brushing waffle iron
Method

Whisk the rice flour and wheat flour together with the salt in a bowl.

Beat the eggs into the coconut milk with the palm sugar until the sugar has dissolved.

Pour the wet mixture into the dry and whisk to a smooth, pourable batter with no lumps of flour left.

Heat a waffle iron and brush it with oil.

Pour in enough batter to fill the plates and cook over medium heat until the waffle is deep golden and crisp at the edges. Repeat with the rest of the batter, oiling between each one.
