Roasted Brussels sprouts

Halved and roasted cut side down, so the flat face caramelizes.

Ingredients

  • 1 1/3 lbBrussels sprouts, trimmed and halved
  • 3 tbspolive oil
  • 1 3/4 ozflaked almonds
  • 1lemon, zest and juice
  • 1 1/2 tspsea salt
  • 1/2 tspblack pepper
  • 1/2 tspdried chili flakes, optional

Method

    Heat the oven to 425°F. Trim the sprouts and cut each one in half through the root, then toss them with the olive oil, salt, pepper and chili flakes.

    Spread the sprouts on a hot tray with every cut face against the metal, and roast without stirring until the flat sides are deeply browned.

    While the sprouts roast, toast the flaked almonds in a dry pan over a medium heat, shaking often, until they are golden and smell nutty.

    Tip the roasted sprouts into a warm bowl, squeeze over the lemon juice, scatter with the zest and the toasted almonds, and toss once.
