Blondies
Melted butter and brown sugar beaten hard, baked until only just set, for a fudgy middle.
Ingredients
- 7 ozsalted butter
- 10 1/2 ozlight brown sugar
- 3eggs, at room temperature
- 7 3/4 ozall-purpose flour
- 2 tspvanilla extract
- 5 1/4 ozwhite chocolate, roughly chopped
- 3/4 tspfine sea salt
- 1/2 tspbaking powder
Method

Heat the oven to 350°F and line a 20 by 30cm pan. Melt the butter, stir it into the brown sugar until it looks like wet sand, and leave it for 5 minutes to come off the boil.

Add the eggs one at a time with the vanilla, beating vigorously for a good minute after each one until the mixture is glossy and noticeably paler.

Sift over the flour, baking powder and salt and fold in with a spatula until only just combined, then fold through most of the white chocolate.

Spread into the pan, scatter the rest of the chocolate over and bake for 22 to 25 minutes, until the edges are set and the middle still has a slight wobble. Cool completely in the pan before cutting.
