Blackened Salmon

Salmon crusted in Cajun spice and seared until the butter and paprika char.

Ingredients

  • 1 1/2 lbsalmon fillets, 4 thick fillets, skin off
  • 2 ozunsalted butter, melted
  • 2 tbspsmoked paprika
  • 1 tspcayenne pepper
  • 2 tspgarlic powder
  • 2 tsponion powder
  • 1 tspdried thyme
  • 1 tspdried oregano
  • 1 tspblack pepper
  • 2 tspsea salt
  • 1lemon, cut into wedges

Method

    Combine the smoked paprika, cayenne, garlic powder, onion powder, thyme, oregano, black pepper and salt on a wide plate.

    Brush the salmon all over with the melted butter, then press each fillet into the spice mix so it takes a thick, even coat on every side.

    Heat a cast-iron pan over high heat with no oil until it is smoking hard. Open a window and turn the extractor on.

    Lay the fillets in and leave them undisturbed until the crust is very dark, then turn once and cook until the salmon is just opaque at the centre.

    Rest for two minutes and serve with the lemon wedges.
