Bibim Guksu (Spicy Cold Noodles)
Ice-cold noodles tossed in a sharp, sweet chilli sauce.

Ingredients
- 7 ozsomyeon, thin Korean wheat noodles
- 2 tbspgochujang
- 1 tspgochugaru
- 2 tbsprice vinegar
- 1 tbspcaster sugar
- 2 tspsoy sauce
- 1 tbspsesame oil
- 1 clovegarlic, finely minced
- 1/2cucumber, cut into fine matchsticks
- 3 1/2 ozkimchi, chopped
- 2eggs
- 2 tsptoasted sesame seeds

Lower the eggs into boiling water and cook for 8 minutes, then cool them under cold running water and peel. Keep the pan of water on the heat for the noodles.

While the eggs cook, whisk the gochujang, gochugaru, rice vinegar, sugar, soy sauce, sesame oil and garlic together in a large bowl until smooth.

Boil the somyeon for 3 minutes, no longer. They go from firm to mush very quickly.

Drain the noodles and rinse them under cold running water, rubbing with your hands until they squeak and no starch remains. Shake dry, then toss them through the sauce with the cucumber and kimchi.

Pile into bowls, halve the boiled eggs and set them on top, then scatter with sesame seeds.
