Beets Soup (Borscht)
Chop the beets. Add to a large pot with the water and bouillon cube and cook for 15 minutes.
Step 2
Add the potatoes and olive oil, bring back to the boil, then cook until the vegetables are soft.
Step 3
Add the cannellini beans and cook for a further 5 minutes. Serve in bowls garnished with fresh dill.
