Baked potato

Skin rubbed with oil and salt, baked straight on the shelf, never wrapped in foil.

Ingredients

  • 4potatoes, large baking potatoes, such as Maris Piper
  • 2 tbspolive oil
  • 2 tspsea salt, flaky
  • 2 ozunsalted butter, to serve
  • 1/2 tspblack pepper

Method

    Heat the oven to 400°F. Scrub the potatoes and dry them completely, prick each one several times with a fork, then rub the skins all over with the olive oil and the flaky salt.

    Put the potatoes directly onto the middle oven shelf with a tray underneath to catch any drips. No foil, no dish, nothing touching them.

    They are done when the skin is dry and crisp and a skewer slides through the middle with no resistance at all. Give them longer rather than less.

    Cut a deep cross in the top of each potato, squeeze the sides to push the middle open, and drop the butter into the steam with a grinding of pepper.
