Bacon sandwich

Canadian bacon under the broiler, soft white bread, butter, and nothing clever.

Ingredients

  • 6 rasherCanadian bacon, dry-cured if you can
  • 4 slicesoft white bread, thick-cut
  • 1 ozsalted butter, cold
  • 2 tbspbrown sauce, or tomato ketchup

Method

    Heat the broiler to high and lay the bacon on a rack over a tray. Cook until the fat has turned golden and the edges have started to crisp.

    Turn the slices over and give them another few minutes, until they are done the way you like them but not brittle.

    Butter the bread while the bacon finishes, going right to the edges but leaving it in streaks rather than working it smooth.

    Lay the bacon across one slice, folding the slices so every bite gets some, add sauce, close it and eat it now.
