Ingredients
- 6 rasherCanadian bacon, dry-cured if you can
- 4 slicesoft white bread, thick-cut
- 1 ozsalted butter, cold
- 2 tbspbrown sauce, or tomato ketchup
Method
- 1
Heat the broiler to high and lay the bacon on a rack over a tray. Cook until the fat has turned golden and the edges have started to crisp.
- 2
Turn the slices over and give them another few minutes, until they are done the way you like them but not brittle.
- 3
Butter the bread while the bacon finishes, going right to the edges but leaving it in streaks rather than working it smooth.
- 4
Lay the bacon across one slice, folding the slices so every bite gets some, add sauce, close it and eat it now.
