Apple sauce
Bramleys collapse to a purée on their own — all it needs is a lid and a low heat.

Ingredients
- 1.8 lbcooking apples, Bramley, peeled, cored and roughly chopped
- 2 ozsuperfine sugar, or to taste
- 3 tbspwater
- 1 tbsplemon juice
- 1 pinchground cloves, optional

Peel, core and roughly chop the apples, tossing them with the lemon juice as you go so they do not brown while you work.

Put the apples in a heavy pan with the water, cover with a lid, and cook over a low heat, shaking the pan occasionally, until they have completely fallen apart.

Beat the sauce smooth with a wooden spoon, then stir in the sugar a little at a time, tasting as you go. Add the cloves if using.

Serve warm with pork, or cool it completely and keep it in the fridge for up to a week. It also freezes well in portions.
