Apple Potato Mash (Hete Bliksem)

Sweet Dutch apple and potato mash with crispy bacon

Ingredients

  • 9 ozapples, peeled and chopped, plus a few slices for garnish
  • 9 ozpotatoes, peeled and cut into even chunks
  • 1cinnamon stick
  • 1 tspmaple syrup, for the caramelized apple slices
  • ground cinnamon, to taste
  • 4bacon, streaky slices
  • 7 ozcheese, cut into slices
  • salt
  • 1egg, whisked
  • 1/3 cupsesame seeds
  • butter

Method

    Peel the potatoes and cut into even-sized chunks. Boil in salted water for 10 minutes, then add the peeled and chopped apples and the cinnamon stick. Continue boiling for another 10 minutes, or until both apples and potatoes are tender to your liking.

    Meanwhile, fry the bacon in a dry pan until crispy. Set aside to drain on paper towels.

    Melt a little butter in a separate skillet. Add a few apple slices, a drizzle of maple syrup, and a pinch of cinnamon. Simmer until the apple slices are soft and caramelized.

    Dip the cheese slices in the whisked egg to coat all sides, then press into the sesame seeds until fully coated.

    Heat a non-stick skillet over high heat until very hot. Add the cheese slices and cook until the sesame seeds are golden brown. Turn and cook the other side quickly, before the cheese melts completely.

    Drain the apples and potatoes and remove the cinnamon stick. Mash together until combined to your preferred texture. Season with salt and ground cinnamon to taste.

    Serve the mash topped with the crispy bacon, caramelized apple slices, and sesame-crusted cheese.
