Apple & Blackberry Crumble
Classic apple and blackberry crumble with vanilla ice cream.
Ingredients
- 1 cupall-purpose flour, for crumble topping
- 5 tbspsuperfine sugar, for crumble topping
- 2 ozbutter, cold; for crumble topping
- 10 1/2 ozbraeburn apples, peeled, cored and diced into 2cm pieces; for compote
- 1 ozbutter, for compote
- 2 1/2 tbspturbinado sugar, for compote
- 4 ozblackberries, for compote
- 1/4 tspground cinnamon, for compote
- 8 3/4 ozvanilla ice cream, to serve

Heat the oven to 375°F/350°F fan/gas 5 (375°F). Tip the flour and sugar into a large bowl. Add the cold butter and rub it in with your fingertips until the mixture looks like light breadcrumbs. Do not overwork it.

Spread the crumble mixture evenly over a baking sheet and bake for 15 minutes until lightly golden.

For the compote, put the butter and turbinado sugar in a medium saucepan and melt over medium heat. Cook for 3 minutes until it turns to a light caramel.

Stir in the apples and cook for 3 minutes. Add the blackberries and cinnamon and cook for 3 minutes more. Cover, remove from the heat and leave for 2–3 minutes.

Spoon the warm fruit into an ovenproof gratin dish, top with the crumble mixture and reheat in the oven for 5–10 minutes. Serve with vanilla ice cream.
