Anzac Biscuits
Classic chewy Anzac biscuits with oats and golden syrup.

Ingredients
- 3 ozporridge oats, rolled oats
- 3 ozdesiccated coconut
- 3 1/2 ozall-purpose flour
- 3 1/2 ozcaster sugar
- 3 1/2 ozbutter
- 1 tbspgolden syrup
- 1 tspbaking soda, dissolved in 2 tbsp boiling water

Heat the oven to 350°F/fan 325°F/gas 4 (350°F). Put the oats, coconut, flour and sugar in a bowl.

Melt the butter in a small pan and stir in the golden syrup. Add the bicarbonate of soda to 2 tbsp boiling water, then stir into the butter and golden syrup mixture.

Make a well in the middle of the dry ingredients and pour in the butter mixture. Stir gently to combine.

Drop dessertspoonfuls of the mixture onto buttered baking sheets, spaced about 2.5cm (1 in) apart to allow for spreading. Bake in batches for 8–10 minutes until golden.

Transfer to a wire rack to cool.
